Pink Cloud is a simple yet delicious dessert my Mom makes for almost every holiday!! Yummy!!
This past Christmas I showed up at my folks…no pink cloud! I was devastated! I
begged asked my Mom kindly if she could make some. Unfortunately she did not have all the ingredients so we improvised with a can of cherry pie filling and chunk pineapple we crushed! So first I’ll give you the original recipe and then I’ll walk you through the improvised version which was actually pretty dang delicious!! (Being a pink cloud critic I will say I could taste only the slightest of differences!)
• 16 oz cream cheese, softened
• 1 jar maraschino cherries
• 30 oz can of crushed pineapple, drained
• 1 cup sugar
• 1 large Cool Whip (or 2 of the little tubs)
Mix juice for cherries, cream cheese and sugar until smooth. Fold in whipped topping, cherries and pineapple. Chill until serving!
First we crushed up the pineapple.
Thaw the whipped topping then add it.
Add the cherries!
Mix in the softened cream cheese!
And here it is:
It didn’t taste quite like the original but that’s probably because of the pie filling being sweetened with Splenda rather than sugar but it was good!!
